Sweet, almost scallop-like flavors with extremely high salinity, created from blue-green nutrient rich water from the Topsail inlet. The “cocktail” size is sure to be a crowd pleaser; best eaten raw. The “select” size is a perfect balance of sweet and salty; great for eating raw, but better sized for cooking.
